
That search led me to a seminar on “Reversing Diabetes and Hypertension,” which I
attended in January 2020. The seminar, led by Dr. Nandita Shah, introduced me to the
power of diet and lifestyle in reversing chronic health conditions. It struck a chord with
me. I realized that I could take charge of my health without relying on long-term
medications, and that diet—especially a plant-based one—could be the key.
Motivated by what I learned, I decided to make significant changes to my diet. My
husband and our two teenage children supported me wholeheartedly, and together, we
began transitioning to a whole food plant-based lifestyle. The benefits became clear
quite quickly: increased energy, weight loss, and a general sense of well-being. It was a
family effort, and seeing everyone thrive made the change even more rewarding.
Cooking has always been a passion of mine, and I dove into the challenge of adapting
my favorite recipes to be plant-based. I particularly enjoy experimenting with gluten-free
options, as I wanted to make sure our meals were not only healthy but also inclusive of
different dietary needs. It’s been incredibly fulfilling to create meals that nourish our
bodies and bring us joy.
In January 2021, I took my commitment to health further by completing a
comprehensive nutrition facilitator training program. This allowed me to deepen my
understanding of plant-based nutrition and how it can support long-term health. Now,
I’m also taking cooking classes to refine my skills and share this knowledge with others.
Looking back, I’m grateful for the health challenges that pushed me to make these
changes. It’s not just about diet—it’s about reclaiming control over your health and
making choices that align with your values. The physical transformation has been
significant, but the mental and emotional shift has been even more powerful. I’m excited
to continue this journey, both for myself and for those I can help along the way.
